Using our CSA Vegetables - Box Five

After we received box five, we went to Kate's cabin for four days and then we were home for three days and we went to Ely for another four days, so using this box was a challenge.

Before we went to Kate's cabin, I made salsa to bring along. It was good salsa uses so many vegetables: tomatoes, onions, jalapenos, cilantro, garlic & peppers. I also brought the watermelon and tomato and cucumber salad to the cabin.


We made the Salsa Verde from our CSA Newsletter with the tomatillos, onion, cilantro, jalapenos and garlic.

I made this Grilled Baba Ghanoush with eggplant from the CSA as well as an eggplant from our garden. This was really good and Patrick liked it better than hummus.

We just boiled the edamame in salted water and ate the soy bean like vegetable as a snack.


Both Patrick and I were home for lunch one Friday, so I made these zucchini sticks with this marinara sauce. We both loved the marinara sauce and the zucchini sticks were a great way to use up our zucchini from our CSA.

I made this roasted salsa from the CSA Newsletter. It was really good and used up the rest of the onions, jalapenos and garlic from our CSA box.

When we were in Ely we used some more veggies in our wraps and we grilled the potatoes with onions and peppers from the CSA.


As a last minute effort to use up more of our vegetables on the day we received another box, I made this pasta dish and it used up the broccoli.

I tossed out the collard greens and arugula, which is pretty good considering we were gone a majority of the time.
