Here is how we used our fourth box of CSA vegetables from Driftless Organics.
We used the tomatoes right away Thursday night for this Fresh Tomato Farfalle with Sweet Corn and Basil.
Patrick isn't a huge fan of beets, so I made this beet salad one night when it was just me. I used the saute mix and beets and I even made a homemade honey balsamic vinaigrette.
We ventured over to Ty's for lunch one Saturday and had sandwiches and an awesome pear salad that Le made. We used the rest of the heirloom tomatoes and the banana pepper for the sandwiches and had the green beans and garlic on the side.
One night for dinner we made turkey burgers, which used some of the sage and grilled the CSA sweet corn for our side dish.
I ate this salad with saute mix, sungold tomatoes and cucumbers from our garden.
We received cucumbers in our CSA and our garden has been producing quite a few, so I made both refrigerator pickles and attempted regular pickles.
For a quick dinner one night we made Pioneer Woman's Summer Stir-Fry. This was great at using up vegetables. It used the leftover grilled sweet corn, zucchini from our CSA and cherry tomatoes from our garden.
I was obviously on a Pioneer Woman kick this week, as we made her Grilled Chicken & Pineapple Quesadillas. We used part of a jalapeno for this recipe.
Patrick made a few different versions of these grilled sandwiches, which used part of the green pepper.
And the rest of the green pepper went to our ground turkey tacos. We also used part of the onion and jalapenos along with tomatoes from our garden.
And last but not least we ate the cauliflower for dinner tonight. I roasted it in a foil packet on the grill with carrots, thyme, rosemary and thyme.
