Here is a recap of how we used our first box of CSA vegetables. Our box contained Asian Greens Mix, Asparagus, Collard Greens, Green Garlic, Pea Vines, Radishes, Spinach, Spring-dug Parsnips, Thyme and Yellow Potatoes.
We used the pea vines in this Almond Soba Noodles recipe.
Here is salad that we used some of the spinach, green garlic and radishes on.
I made some Green Monster Smoothies with the spinach and some of our leftover fruit we had around.
We used some of the collard greens instead of bread with sandwich fixings.

The potatoes were sides with our egg and cheese sandwiches and steak.
