Kate's Bachelorette Party

Last Saturday we celebrated Kate's last days as a single lady. Kate is getting married in November in our hometown. For her celebration we took a limo to the Parley Lake Winery in Waconia. We reserved a small room in their tasting barn which we used to eat lunch in and hang out in between a hayride tour of the vineyards and a tour of the wine barrels. The day went really smoothly. The bridesmaids organized the lunch and some games, while our coordinator at the winery did a great job of spreading out the wine tastings between our tours. After the winery we headed back to hotel before going to Toby Keith's for the evening.

Lombardi Play at the Minnesota History Theatre

Last Thursday night we picked up our last CSA box of the season and then headed to St. Paul for dinner at the newly remodeled Cossetta. The food was delicious as expected.

After dinner we headed to the History Theatre for the Lombardi play. Vince Lombardi was the legendary coach of the Green Bay Packers back in the 1950's and 1960's. I had seen that this Broadway play was coming to Minnesota in the MSP Magazine, so I decided this would be the perfect birthday present for Patrick. He loved it, he said it was the best play ever. I really enjoyed the play as well. Funny thing was we even saw our friend Frankie during the intermission.

Erin and Jachin's Wedding

Last Sunday we headed to Hutchinson, Minnesota to celebrate Erin and Jachin's wedding. We have been anticipating this wedding since they got engaged last winter and it definitely lived up to our expectations. It ended up being a beautiful day for a fall outdoor ceremony at Erin's parents farm. The ceremony was absolutely beautiful and meaningful. Our friend Jachin was the most giddy groom I have ever met, he was grinning ear to ear all day long.

After the ceremony they had cocktail hour at the farm, so we explored and drank some wine before heading to the Crow River Winery for the reception. The rest of the evening included all the right elements for a great time: awesome food, good wine, tear jerking speeches and a packed dance floor. Not to mention late night pizza and fireworks. Not a detail was missed with this wedding and the wedding photographer in me loved it.

Pumpkin Bars with Cream Cheese Frosting

A couple weeks ago I made these bars for a little get together with old co-workers. There was plenty of other food there so not many got ate at the party, but that meant Patrick and I were able to enjoy them for a good week. I really liked these bars. I made them in a 9x13 pan and it was more like pumpkin cake, but very tasty. And of course we loved the frosting. What's not to love about cream cheese frosting.

Pumpkin Bars

Pumpkin Bars
2 cups all purpose flour
1 ½ cups packed brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons pumpkin pie spice
¼ teaspoon salt
½ cup vegetable oil
½ cup apple juice
1 can (15 oz) pumpkin (not pumpkin pie mix)
2 eggs

10 oz. cream cheese, chilled
6½ tbsp. unsalted butter, at room temperature
3¼ cups confectioners’ sugar, sifted
4 tsp. clear vanilla extract

Heat oven to 350 degrees. Grease 15x10 or 13x9 pan; lightly flour. In a large bowl with electric mixer, beat bar ingredients on low speed until moistened. Beat 2 minutes on medium speed. Spread batter in pan.

Bake 20 to 30 minutes or until toothpick inserted comes out clean. Cool completely, about 1 hour.

To make the frosting combine the cream cheese and butter in the bowl of an electric mixer. Beat on medium-high speed until light and fluffy, about 2-3 minutes. Add in the confectioners’ sugar and mix on low speed just until incorporated. Increase the speed to medium-high and beat 2-3 minutes more. Blend in the vanilla.

Spread frosting over cooled bars. Refrigerate until set. Store in refrigerator.

St. Croix State Park

Last weekend was gorgeous. This weekend is cold and showing way too many signs of winter. So, I am going to remember how gorgeous the weather was last weekend and be happy we aren't sleeping outside tonight:)

Last weekend we headed to St. Croix State Park in Hinckley, Minnesota for a one night camping adventure. Instead of it just being the two of us this time we went with a group of friends (Elysia, Alison, Steph, JP, Cathy & Nate). We reserved at group site online and when we checked in they said the group sites had been closed for the season. Luckily that just meant they had turned off the water spickets. This campsite was considered primitive, not sure why we could see the bathrooms from our tent and we were parked about 100 yards from our car.

After we got our tents set up and ate lunch we headed out to do some hiking. This is a huge State Park, so we actually got in the car and drove 9 miles to get to the hiking trail. We then spent a few hours hiking along the Kettle and St. Croix Rivers.

We got back to our site got a fire going, cooked dinner and spent the rest of the night around the campfire listening to a sweet 90's music playlist.

In the morning we cooked up breakfast, packed up and headed home. It was great to be able to get outside and enjoy the fall colors in awesome weather.
