Week Four of Our Unprocessed Food Challenge

We did pretty well our last week of the challenge. One of our favorites from before this challenge was the Avocado Egg Salad. The photo doesn't look that appetizing since we used some very ripe tomatoes, but trust me it is really good. Neither of us was a huge fan of the portabello mushroom burgers. They just didn't have enough flavor without cheese on top. One good discovery this week was a pasta less pasta dish that I made for lunch on Friday. We had some meatballs to eat up, so I sauteed the meatballs, cherry tomatoes, spinach, pesto and baby bel cheese together. It was so good and I didn't even miss the noodles at all. The cheese isn't paleo, but we decided we will probably add it and beans into our meals sparingly in the future.

Both of us really enjoy eating this way, so we plan to continue this lifestyle. We both feel better and have more energy by eliminating filler foods like pasta and bread. We plan to follow the 85/15 rule and occasionally indulge in foods that don't fit into this lifestyle because we all know that we will never be able to completely give up foods like pizza and Chipotle burritos.

Lunch - (Patrick) - Veggies, Guacamole, Fruit & Boiled Egg
Dinner - Avocado Egg Salad Lettuce Wraps + Side Salad & Celery w/Almond Butter & Raisins
